As we begin to make changes to our diet, it's nice to find meals that still scratch our cravings for certain comfort foods. This dish is a veggieFULL option for the pasta and Italian food lovers out there. One of my favorite things about this dish is that I can eat 2-3 times a normal pasta serving and STILL be at only half the calories of a normal pasta dish. It also has 5+ servings of vegetables! How often can we say THAT about our meals?

I modified this recipe from an entry in Super Immunity by Dr. Joel Fuhrman. The ingredients are chosen primarily to nutritionally support, as you can guess, our immunity system. Not only that, but this recipe is both gluten free and dairy free!

Based on my 5 tips for healthier cooking, I decided to do this recipe! I wanted to make a comforting dish that was heavier on the veggies.
The original idea was a cheesy pasta. A delicious way to enjoy this is in a pasta primavera! I used six different vegetables in this dish. My hope was that there would be more veggies than pasta, but I didn't quite hit that mark.
You can get a better ratio of veggies to pasta, though! I'll show you what I'll do differently next time. ;)

Here's why this is good. This is a low glycemic meal option. You get the comforty goodness of pasta without the processed pasta noodles and sugary sauces. The noodles are another serving of vegetables! What a concept. We love it, and I think you will too!
