This is so simple and SO tasty. It's perfect as a pre-made option for a week of breakfast or as something to offer guests who've spent the night. It's only got 5 major ingredients, 4 of which are plants! Not only that, but it's dairy free, gluten free, and vegetarian.
I wanted to try something new, and I wanted something the would be healthy but still taste comfort-foodish. You know what I mean? Something warm, creamy, and delicious. So I looked up ideas for healthy casseroles.
When considering one of the recipes I found, I was really leery about including nutmeg in a savory dish. BUT I went with it, and the flavor of this casserole was SO good. I was even excited to eat it for leftovers the next day... and I don't usually like next day food.
I modified this recipe from an entry in Super Immunity by Dr. Joel Fuhrman. The ingredients are chosen primarily to nutritionally support, as you can guess, our immunity system. Not only that, but this recipe is both gluten free and dairy free!
