The secret to these is the DRESSING you marinate them in. I HIGHLY recommend using Primal Kitchen honey mustard. However, any "no sugar added" or organic, minimal ingredient dressing will work. You can also make your own marinade.
Here's what you'll need:
2 lbs of chicken breast, cut into chunks
2 zucchini's, sliced
1 yellow onion
1 lb of mini bell peppers, sliced
8oz of mushrooms
Soaked kabob skewers
1 cup of paleo marinade
Instructions:
Soak the kabob skewers for at least 4 hours or over night
Assemble the kabobs alternating between chicken pieces and veggies
Using a pan or a ziplock bag, coat the kabobs in the marinade
Let the kabobs marinade for 1-2 days
For baked kabobs:
Set the oven to 350
Place the kabobs on a baking sheet
Bake for 20 min or until chicken is 165F in temperature
For grilled
Place the kabobs on the grill, and cook for 10-15 minutes on medium high, alternating every few minutes
Cook until the chicken is 165F in temperature
Serve with other veggies or enjoy alone!
