I'm a fan of kale... when it's mixed into things or hiding amongst other flavors. I was leery about how this salad would taste since the only lettuce was kale.
My concerns were misplaced, this salad was SUPER tasty. I made it as a part of our Thanksgiving ensemble, not expecting it to make it on many plates. I was so happy to see every one of the 12 people who were over try the salad. Some of them even returned for seconds!
If ever there was a power salad with a great macro balance and tons of great nutrition... this is it! And it's ridiculously easy to make.
So here's the ingredients:
1 large bunch of kale (with the thick stems, not baby kale)
1/4 cup of chopped walnuts (you can use almonds or pecans if you prefer!)
1/2 cup of cherry tomatoes, cut in half
1/2 lemon, juiced
1/4 cup of extra virgin olive oil
1/4 cup of grated parmesan cheese (not the pre-grated kind you can get unrefridgerated)
Sea salt and ground pepper to taste (optional)
The key to delicious kale is to give it a massage! I know, sounds weird, but it totally changes it's consistency from rough and crunchy to smooth and leafy like a salad should be.
Here's what to do:
Toast the walnuts in a skillet over medium heat until they begin to brown. Refrigerate while you finish the rest of the salad.
Remove the stems from the kale and separate into bite size pieces
Massage the kale with the lemon juice to soften the leaves and cut the bitterness
Massaging is just how it sounds, rub the kale and toss it about, you'll start to see the texture soften
Combine in a large bowl with olive oil and lemon juice
Massage until kale softens and drain any liquid released from the kale
Toss the massaged kale with the tomatoes, walnuts, and grated parmesan.
If desired, add salt and pepper to taste.
Voila! You have a ridiculously healthy and delicious kale salad with homemade dressing!
I felt so chef-like when I made it.
