Based on my 5 tips for healthier cooking, I decided to do this recipe! I wanted to make a comforting dish that was heavier on the veggies.
The original idea was a cheesy pasta. A delicious way to enjoy this is in a pasta primavera! I used six different vegetables in this dish. My hope was that there would be more veggies than pasta, but I didn't quite hit that mark.
You can get a better ratio of veggies to pasta, though! I'll show you what I'll do differently next time. ;)
Here's my pan of cut up veggies, ready to be cooked. They filled my largest pan, doesn't it look like I had enough? Haha. I sure thought so!
I bought gluten free pasta, just to try it out. I was grateful for a lady at the grocery store who saw me deliberating over which one to get. She leaned over and said, "Get the corn based pasta. It tastes like the real thing!" My food decision angel! haha.
So my mistake was making the entire bag of pasta. Either I would need to make 3/4 of the pasta or make even more veggies. I'll note that below!

So here's how to have super tasty cheesy, veggie pasta!
1 lb of pasta (Like I said, I used a corn based one)
2 cups of fresh broccoli florets
2 cups of asparagus spears, trimmed and cut into 2-in pieces
1 large sweet pepper, diced (I used yellow)
1 medium onion, diced (I like red onion, personally)
4 cloves of garlic, minced
3 TBS and 1 tsp of olive oil
1 cup of fresh spinach or kale, roughly chopped
1 cup of cherry tomatoes, halved
1/4 cup of lemon juice
2 TBS of minced fresh basil
Salt and pepper to taste
Grated parmesan cheese for topping
Cook pasta according to package instructions, add a tsp of olive oil, then set aside.
In a large skilet over medium-high heat, saute broccoli, asparagus, pepper, onion, and garlic in the olicve oil until the veggies are tender, about 7-10 minutes. Stir in the spinach and tomatoes, and continue cooking for another 5 minutes.
Remove the cooked veggies from the heat and stir in the cooked pasta, lemon juice, and basil. Season with salt and pepper to taste and top pasta primavera with grated Parmesan cheese.
And there you have it! The comforty goodness of cheesy pasta with 6 different kinds of veggies!!
