This one is one of our all time favorites! The flavor is SO good that it beats many of the fried rice dishes I've had eating out.This recipe provides a great way to use up veggies from a previous night so that they don't go bad. I know this, becuase that's what I did. I used the veggies from the pasta primavera recipe from a couple of days ago. ;)
Healthy eating shouldn't be that expensive or challenging. Ryan and I want to show how it's possible to use up all that you buy, to make nutritious meals, without letting it go to waste! I wrote another recipe last month on how I'd use veggies that could go bad in a slow cooker dish. You can give that a look as well. :)
Okay, the quinoa stir fry, that's what you're hear for. I usually make this with some organic free range chicken, but I totally forgot to thaw it from the freezer. Oops! I accomodated the lack of protein with extra eggs. So this particular make is both vegetarian and gluten free.
1 cup of quinoa
2 cups of chicken broth
1 TBS of olive oil
1 Tsp of sesame seed oil
2 cloves garlic, minced
2 eggs, beaten
Salt to taste
2 TBS lite soy sauce
Veggies: (Use what you want! In this particular dish I used what's below)
In the past I've used:
(some people like peas... I don't)
In a medium pot, add quinoa and broth. Cook on medium high heat, cover, and cook until it begins to boil. Once it boils, lower the heat and simmer for 15 minutes, or until the liquid is absorbed. Set aside and let it cool in the refrigerator for 2 hours. It helps to prep the night before or earlier in the day. (I have skipped the cooling step in the past, and it still turned out great, though!)
In a large skillet, heat the oils to medium low heat, add the veggies you chose and cook until tender, approximately 8 minutes. Add garlic, cook one addiitonal minute. Add quinoa, and cook breifly until heated through.
Push the quinoa to the edges, add eggs to the center and scramble them in the opening. Stir to combine the scrambled eggs with the rest of the mixture. Add soy sauce, and cook until it's mixed in.
** If you want to make it with chicken, cook 1 in cubes of chicken in a separate pan with olive oil and salt until cooked through. Add with the mix when you add the quinoa. ***
