A homemade cookie doesn't get easier or healthier than these. I'm not going to lie, we have these at least once a week, sometimes more. I grew up ending most meals with a sweet. These have offered me a satisfying and healthy option!

Here are the specifics and some variations on a sliding scale of healthy to healthy-ish.
Makes about 12 cookies.
2 ripe bananas
1 cup of oats (use certified gluten free for those who need it!)
1/2 cup of any of the following:
1 good spoonful of peanut butter (I add this to most of the combos)
Chocolate chips (semi-sweet, milk chocolate, or white chocolate!)
Diced apples (with cinnamon is quite tasty)
Walnuts (with zucchini and strawberry was amazing)
Strawberries (goes GREAT with peanut butter and/or white chocolate chips)
Diced zucchini, no skin.
Those are at least the variations I've tried. The base is the bananas and oatmeal. There is a lot of freedom to vary ingredients!
Set oven to 350
Mash bananas with oats and peanut butter
Mix in added ingredients
Spoon (or use a cookie scoop) onto a greased cookie sheet or ungreased parchment paper on a cookie sheet.
