Surprisingly, the tortillas were not that hard to make. They just take a lot of time. So, if you've got extra time and you want to try something new or feel super accomplished, try making the tortillas! If you're strapped for time, then purchasing some whole wheat veggie tortillas is definitely an option!
The quesadilla was SUPER tasty. I know, I say that about everything I post... but why post it if it's not?! It's very flavorful. Without making the tortillas, it's a quick meal to make.
Tortillas (made about 7 tortillas)
3 cups of whole wheat flour
1 1/2 tsp of baking powder
1 tsp of salt
4 TBS of extra virgin olive oil
4 oz of kale or spinach (2-3 huge handfuls)
3/4 c. of almond milk
Mix together the flour, baking powder, salt, and olive oil. Set aside.
Blend the almond milk and kale/spinach
Combine the dry with the wet until fully mixed. Roll into a ball and chill for 30 minutes.
Once the dough is chilled, make golf ball sized balls. Roll them out using extra flour so the dough doesn't stick.
Cook the rolled out dough in a skillet on medium heat without any oil or nonstick. Cook on each side for about 2-3 minutes, until done.
1 red bell pepper, diced
1 green bell pepper, diced
1 red onion, diced
Pepper jack cheese
Jalepeno chicken sausage (or a fitting flavor of your choice)
Whole wheat kale tortillas
Saute the bell pepper and onion.
Cook the chicken sausage thoroughly, making sure it is broken up into small pieces.
Set tortilla on a lightly buttered skillet. Lay pepper jack cheese on one half of the tortilla. Add peppers and onion on top. Add salsa. Add cilantro. Fold tortilla in half and serve.
Add avocado on top! (unless you want it inside the tortilla, of course)
