This was super tasty. Major comfort food right here. Now, I wouldn't call this "healthy" per se. BUT it definitely is a great healthier alternative to the way enchiladas are usually prepared. If you don't want to go crazy on your cheat day, this is your meal! It does not disappoint or leave you feeling like you missed out. Doesn't it look beautiful? haha.
It's gluten free, and has a good amount of veggies in there. ;) What's a dish without veggies?! It's also really easy to make. It only takes about 20 minutes of prep time, and then it bakes for 30 minutes. I pre-made it around lunch, stuck it in the fridge, and then baked it in time for dinner.
