These were a spur of the moment, "Oh no! I need a snack to feed 30 people at church" creation. You know how that goes... haha.
One of my favorite ways to help out at service is to bring healthy snacks for everyone. It's important to me because I really value the health of the Body of Christ - not just healthy hearts in a metaphorical, emotional sense, but the actual physical health of the hearts and bodies that make up the Body of Christ. If church gatherings have bagels and donuts in the morning, potato salad at potlucks, and pizza at youth events... what is being communicate about our purpose? We've got a purpose, a difference to make in this world. If our diet is compromising our energy, our strength, our sleep, or our quality of life... it's compromising the impact we can make.
Anyways... I'll make the above thought a blog in and of itself at some point.
Back to the peach bites...
I'm always looking for ways to pair sweet with savory. I also really like using what's in season. So this is what came about!
This took about 20 minutes from start to finish.
Here's what you need:
French baguette, sliced and toasted
Salt and pepper
1/4 cup of diced red onions
1/4 cup of balsamic
1 peach, sliced
Lay out your baguette slices on a baking sheet or surface of some sort
Mash the avocados, mix in the onions, and add salt and pepper to taste
Spread the avocado mixture on the baguettes
Use a 1/4 tsp spoon to add balsamic vinegar to each avocado covered baguette
