This is so simple and SO tasty. It's perfect as a pre-made option for a week of breakfast or as something to offer guests who've spent the night. It's only got 5 major ingredients, 4 of which are plants! Not only that, but it's dairy free, gluten free, and vegetarian.
1 head of broccoli, cut into small pieces
8 oz of mushrooms, sliced
1 small onion, diced
3 cloves of garlic, minced
1/2 tsp of salt
pinch of pepper
1. Set oven to 350F
2. Saute the vegetables until soft Whisk eggs, garlic, salt & pepper
4. Add veggies to greased 9x13 pan. Pour eggs on top.
