    One of the challenges I have with buying produce and trying to eat more veggies is... uneaten produce and vegggies. I get all excited about eating well, getting more servings of veggies in, and then before I know it, the week has passed, and I have a ton of uneaten veggies.     Chicken Sausage Kale Soup

    So the truth is... I've never made homemade soup before. And, well, this turned out REAL good. Who knew making soup was so easy! There's no sugar. It's gluten free and dairy free. It could also be vegan if people wanted to skip the chicken sausage.
