I don't know why I've never tried these before. Such an easy and quick recipe. I made it in about 25 minutes start to finish. It has all the delicious comforts of regular tacos with less of the oil and empty carbs.
Maybe it's cheesy (no pun intended), but the smiley in the picture is how these made me feel. haha.
Ingredients:
A romaine lettuce head
1/2 lb of ground turkey meat
Taco seasoning packet
1/2 lime juice
2 bell peppers (I did one green and one red), diced
1/2 onion, diced
2 tsp of olive oil
1/2 cup of fresh organic salsa
2 Avocados
1/4 cup of shredded pepper jack cheese
1 can of black beans
1/4 cup of Fresh chopped cilantro
Directions:
Combine the turkey meat with the taco seasoning, lime juice, and some of the chopped cilantro. Begin cooking on medium heat.
Saute the onion and bell peppers in the olive oil on medium heat for about 7 minutes.
Mash the avocados, and mix with the salsa and remaining lime juice. (easy guac, boom!)
Heat the black beans in a small pot for about 5 min on medium heat.
Once everything is cooked, pile on the beans, meat, veggies, cilantro, cheese, and guac on the romaine leaves!
