This is definitely my new favorite salad. Ryan and I had a bit less than healthy day on Saturday, and on Sunday our bodies were crying for some higher quality foods. We'd never really had a salad for our meal. Usually it was a compliment to something else. Since we weren't looking to eat a ton, and we wanted to get some quality nutrition, this is where we landed, and boy was it good!
It has that sweet and savory dynamic going on. Ryan and I love foods like that!
We used kale, but I think we'd both prefer it with spinach. After seeing the cost of a container of organic spinach, the $.99 bundle of organic kale won! Haha.
So here's what's in it:
3 strips of bacon
A bundle of kale (or spinach), chopped (about 4-5 cups)
2 pears, peeled and sliced
1/2 lemon juice
1/4 cup of sliced green onions
1/2 cup of chopped walnuts
1/3 cup of olive oil
3 TBS of balsamic vinegar
1 1/2 tsps of honey
1 1/2 tsps of dijon mustard
1 clove of garlic, minced
1/2 tsp of salt
1/2 cup of goat cheese
1 avocado
And how I put it together:
Cook the bacon to a crisp. Set it aside to cool. Then chop into bits.
Massage the kale with the lemon juice.
Mix together the pears, green onions, and walnuts in a salad bowl.
Whisk together the oilive oil, red wine vinegar, honey, mustard, garlic, and salt. Pour over the salad and toss.
Add the bacon, goat cheese, and avocado as desired on top!
