Veggie Quiche

This is so simple and SO tasty. It's perfect as a pre-made option for a week of breakfast or as something to offer guests who've spent the night. It's only got 5 major ingredients, 4 of which are plants! Not only that, but it's dairy free, gluten free, and vegetarian.

Makes 12 squares.

Ingredients:

  • 1 head of broccoli, cut into small pieces

  • 8 oz of mushrooms, sliced

  • 1 small onion, diced

  • 16 eggs

  • 3 cloves of garlic, minced

  • 1/2 tsp of salt

  • pinch of pepper

Instructions:

1. Set oven to 350F 2. Saute the vegetables until soft Whisk eggs, garlic, salt & pepper 4. Add veggies to greased 9x13 pan. Pour eggs on top. 5. Bake for 30 minutes or until cooked through.
