Cauliflower Fried Rice with Pulled Pork!

I LOVE when I can find a healthy and SATISFYING alternative to take out that I can easily make at home.


THIS is one of those recipes.


I give you Cauliflower Fried Rice with Pulled Pork!

This is so easy to make and SO tasty!!

It’s got lots of protein and veggies and it’s packed with flavor.



Here’s all you need to make it:

3lbs of pork shoulder 1 cup of bone broth 1tsp of salt 2 medium cauliflower heads 1 frozen bag of peas & carrots 6 garlic cloves 2 inches of grated ginger 1/3 cup of coconut aminos 2 tbs of sesame seed oil 1 tbs of rice vinegar 4 large eggs Diced green onions for garnish


Aaand here’s how you make it:

  1. Rub the pork with the salt and place it in a crock pot with the bone broth. Cook on low for 10 hours. (I usually do it at night so it’s ready in the morning and I’ll put it in the fridge until dinner time)

  2. Chop the cauliflower into small florets and add to a food processor until it is processed into rice sized pieces. (You can also just buy riced cauliflower)

  3. Add the frozen peas and carrots to a large pan. Cook until thawed.

  4. Add the cauliflower rice.

  5. While the veggies are heating up, mince the garlic and grate the ginger.

  6. In a separate pan, begin heating up the pork.

  7. Make a small opening in the veggies in the center of the pan, add the oil, garlic, and ginger and cook a minute until fragrant, then mix in.

  8. Mix in the coconut aminos and the rice vinegar.

  9. Make another medium hole in the center of the veggies and scramble the eggs until completely cooked. Then mix into the rest of the cauliflower.

Serve the rice with the pork & green onions and enjoy!!
