Cauliflower Mashed Potatoes

First of all, the beef in this photo is an exciting find from Costco. It's pre-cooked and pre-sliced grass fed beef. It's seasoned SO well and it tastes amazing. This whole meal took less than 25 minutes. It's worth looking for at your local Costco! I know options vary from store to store.


Secondly, these cauliflower mashed potatoes have creeped in as a consistent staple. Since I've gotten my instant pot, I've been enjoying how quick it is to make this!


The best thing about this recipe is that these potatoes taste like regular mashed potatoes but are actually another source of veggies!!


Without further ado, here's the recipe...

Serves 4-6

Ingredients:

  • 3-4 small red or yellow potatoes, cut into 2 inch cubes

  • 1/2 a large cauliflower cut into 2-3 in chunks

  • 1 cup of chicken broth

  • 1/4 cup of butter

  • salt and pepper to taste


All it takes is...

  • Toss the potatoes and cauliflower into the instant pot

  • Add the bone broth

  • Set instant pot for 8 minutes. Once it's finished, hit quick release. Takes about 15-20 min.

  • Dump the potatoes and cauliflower into a mixing bowl along with all the liquid from the pot and mash together.

  • Add in butter, salt, and pepper.
