Paleo Beef Stroganoff with Gnocchi

Trader Joe's cauliflower gnocchi made another appearance in our dinner this past week! THIS recipe will definitely scratch your comfort food itch.

It’s essentially a quick & healthy version of beef stroganoff. I posted a true different version of stroganoff a couple months ago. This one has the same flavors as that one with the carby satisfaction of the gnocchi instead of pasta or, in my other version, sweet potato noodles.


Without further ado, here’s what ya might want to make tonight!

Ingredients:

💚1 lb of grass fed ground beef (got mine from Butcher Box)

💚1 package of Trader Joe’s cauliflower gnocchi

💚1 8 oz package of white mushrooms

💚1/2 bunch of kale, shredded

💚1 tsp of black pepper

💚1 tsp of onion powder

💚1 tsp of garlic powder

💚1/4 tsp of cayenne pepper

💚1 tbs of grass fed butter

💚1 onion, finely diced

💚4 cloves of garlic, minced

💚1 tbs of Worcestershire sauce

💚2 tsp of Dijon mustard

💚1/2 cup of coconut cream (take from the top of full fat coconut milk from the can)

Instructions:

🙌Start the ground beef on low in one pan

🙌Start the cauliflower gnocchi and cook according to instructions in another pan (doesn’t need the extra water recommended on the instructions if frozen.)

🙌Saute the onions and mushrooms in the grass fed butter until almost cooked then add the garlic kale, stop cooking when kale turns bright green (can cook in yet another pan or with the ground beef)

🙌Add in all the spices, condiments, and coconut milk to the beef.

🙌Once the gnocchi is done, add to the beef, which should be cooked through by then.

🙌Mix it all up and enjoy!
