I’ve got a delicious, healthy broccoli salad recipe for you!!
I wanted to find a way to use the broccoli I got in my CSA box from @goodlifeorganics. I’ve always loved broccoli salad, but most places I’d go to get it, they used poor quality ingredients. The two main ingredients that kept me from getting it are canola oil based mayo and sugar. Don’t worry, this recipe still has mayo. It can be a source of healthy fats, after all. But as I always emphasize, it’s so important to use quality ingredients. That’s why I use @primalkitchenfoods avocado oil based mayo. Also, broccoli salad can usually be excessive in sugar. In addition to the sugar in the dressing, it usually includes dried cranberries, which might as well be candy. So instead of cranberries, it has grapes! This leaves you with all the delight of broccoli salad without the ingredients that cause unnecessary inflammation.
Without further ado, here’s the recipe! Ingredients: 💚2 organic broccoli heads cut into small florets 💚6 slices of pasture raised or organic bacon 💚1 cup of grapes cut into thirds 💚1/2 cup of sunflower seeds 💚1/4 cup of diced red onion Dressing 💚1/2 cup of avocado oil based mayo 💚1 tbs of coconut sugar (or to taste) 💚Salt & pepper to taste Directions: 🙌Cook the bacon and set aside. 🙌Boil a pot of water. Toss in the broccoli for 1 minute to blanch. Then throw into a bowl of ice to stop cooking and cool. 🙌Dice the onion and chop the grapes. 🙌Mix together the dressing ingredients. Taste as you go to get the flavor you want! 🙌Drain the broccoli. 🙌Chop the bacon and toss in with the broccoli, grapes, onion, and sunflower seeds. 🙌Add in the sauce... and enjoy!!
