Pesto Cauliflower Gnocchi & Grass Fed Ground Beef

If you answered yes to all, you're in luck! Ha. This recipe has got you covered! This is one of my TOP go to recipes. The cauliflower gnocchi tastes like the real thing, the pesto is rich and creamy, and the beef adds a hearty goodness I never get sick of.

It's packed with healthy protein, fats, and nutrients from the veggies, AND it takes less than 20 minutes to make.

Without further ado, here's what you need:

  • 2 Bags of Trader Joe's Cauliflower Gnocchi

  • 1 tbs of grass fed butter

  • 2.5kbs of grass fed ground beef

  • 1 bunch of asparagus, cut into 2 in pieces

  • 1/3 a large onion, diced

  • 2 large tomatoes, diced

  • 2 Containers of Trader Joe's Kale-Cashew Pesto

Here's how to make it:

  • In one pan, melt the butter and toss in the gnocchi, frozen. No need to thaw.

  • While the gnocchi is cooking, throw the ground beef in another pan and cook until it is all browned.

  • After the gnocchi has begun to thaw and started to brown, toss in the veggies. Cook until the asparagus is tender crisp and the onions are translucent.

  • Use a slotted spoon to drain some of the fat and liquid from the beef as you add it to the gnocchi and veggies.

  • Dump the two containers of pesto onto the beef, gnocchi, and veggies. Stir until the pesto has warmed.

  • Enjoy!!
